U petak, 28. novembra, u restoranu Metropolitan hotela Hyatt Regency Beograd održaće se novi događaj u okviru projekta Mapa Atelier.
Ovog puta, u Beograd dolazi Aybek Akmatov glavni kuvar hotela Hyatt Regency Bishkek, koji će zajedno sa Milanom Čotrom, glavnim kuvarom hotela Hyatt Regency Beograd, pripremiti tradicionalna kirgistanska jela u savremenoj interpretaciji.
Večera će se sastojati od četiri specijaliteta.
Za početak, poslužiće se boorsok – tradicionalni kirgistanski prženi hleb sa kaimakom, čubogom (vrsta gustog kajmaka) i sary mai (prečišćenim puterom), uz suvo voće i kurut.
Boorsok potiče još iz srednjeg veka, kada su nomadi hleb pripremali na vatri umesto u peći. Od testa su pravili male komade koje su brzo pržili u vrelom ulju – jednostavna hrana koja je postala simbol gostoprimstva.
Kurut ima sličnu priču – nomadi su na taj način čuvali mleko tokom dugih putovanja po stepi. Ove male kuglice od osušenog kiselog mleka ili jogurta smatraju se jednim od najstarijih užina na svetu.
Zatim sledi byshkan til – kuvani goveđi jezik sa sosom, regionalni klasik shakarap – salata od paradajza i luka, i samsa sa govedinom i lukom.
Potom chuchpara – bistar bujon sa malim piroškama i pavlakom, jelo koje datira još iz vremena Velikog puta svile.
Kao glavno jelo, poslužiće se beshbarmak – rezanci sa konjskim mesom ili jagnjetinom (po izboru) i lukom. Naziv jela doslovno znači „pet prstiju“, jer se nekada jelo rukama.
Za desert – chak-chak “Mille-Feuille”, moderna verzija klasičnog istočnog deserta od prženog testa u medu, sa hrskavom teksturom i karamelastom slatkoćom, uz sladoled i krem od kondenzovanog mleka.
Tokom večere, Aybek Akmatov i Milan Čotra lično će pričati o svakom jelu, njegovom poreklu i značenju, kao i o istoriji i kulturi Kirgistana.

On Friday, November 28, the Metropolitan restaurant at Hyatt Regency Belgrade will host a new dinner as part of the Mapa Atelier project.
This time, Executive Chef Aybek Akmatov from Hyatt Regency Bishkek, Kyrgyzstan, will travel to Belgrade to join Milan Čotra, Executive Chef at Hyatt Regency Belgrade. Together, they will prepare traditional Kyrgyz dishes with a modern twist.
The dinner will feature four courses.
To start, guests will enjoy boorsok – Kyrgyz fried bread served with kaimak (clotted cream), chubogo (a type of rich cream), sary mai (clarified butter), as well as dried fruits and kurut.
Boorsok dates back to the Middle Ages, when nomads cooked bread over an open fire instead of in an oven. The dough was cut into small pieces and quickly fried in hot oil — a simple, travel-friendly food that became a symbol of hospitality.
Kurut has a similar story – it was how nomads preserved milk on long journeys across the steppe. These small dried balls of fermented milk or yogurt are considered one of the world’s oldest snacks.
Next, the menu includes byshkan til (boiled beef tongue with sauce), the regional classic shakarap (tomato and onion salad), and samsa with beef and onion.
Then comes chuchpara – a clear broth with tiny dumplings and sour cream, a dish that dates back to the times of the Silk Road.
For the main course, guests will be served beshbarmak – noodles with horse meat or lamb (your choice) and onions. The name literally means “five fingers”, as it was traditionally eaten by hand.
To finish, dessert will feature chak-chak “Mille-Feuille” – a modern version of the classic honey-fried pastry, layered and crispy with caramel sweetness – served with ice cream and condensed milk cream.
Throughout the evening, Aybek Akmatov and Milan Čotra will share stories about each course, its origins, and the cultural meaning behind it.
Spirit of Kyrgyzstan, presented by Mapa Atelier and Hyatt Regency Belgrade, is an invitation to discover the cuisine of a distant, nomadic land with a rich and fascinating history.
